Leonardi started in the 18th century and since then have specialised in one thing only: the production of balsamic vinegar, using their own raw materials. In fact, the farmhouse is surrounded by 10 hectares of vineyards, mainly with grapes varieties of Trebbiano (white grape) and Lambrusco (red grape). It is a closed cycle farm since all the production steps take place in the same plant.

The Balsamic Vinegar is a very unique condiment, produced in limited quantity as it is linked to the geographical areas of Modena and Reggio Emilia. It seems that the special climate of this region, with high thermic shocks between the hot summers and the chilly winters, enables the grape must to ferment in the best conditions according to the traditional methods.

The Ferron family has specialised in rice production for five generations and has played a key role in preserving the rice growing tradition of region of Isola della Scala near Verona in Northern Italy. The Pila Vecia (‘old mill’ in the Veronese dialect) which is at the centre of production at Antica Riseria Ferron has been in operation since 1656.

Chef Gabriele Ferron leads a consortium of rice growers in the Isola della Scala valley to protect the Vialone Nano rice and Carnaroli rice species and travels the world tirelessly promoting how to cook authentic, traditional risotto.

Vialone Nano and Carnaroli rice which have high levels of a starch called amylase found in the centre of the grains, as well as surface amylopectin starch. This makes a risotto where each grain holds its individual shape and ‘al dente’ texture while still binding to each other to achieve an overall creaminess. The actual nutty flavour of the rice is central to this style of risotto which is best prepared with delicate flavours of vegetables, herbs and seafood. It is this style of rice which is preferred by the majority of Italian chefs and connoisseurs.

Ferron rice is organic and there is no use of pesticides or herbicides. In accordance with traditional farming practices, fields are routinely left fallow. In non-planting years, corn and medicinal herbs are cultivated to replenish the soil with nutrients. Water from pure and unpolluted underground springs fed by the Italian Alps encourages pristine crop growth. The fields are full of carp which control pests in a delicate and naturally maintained ecosystem.

Rio Vista Olives was born in 1996 by the hard-working Augusto & Helen Lorenzetti. Hand planting all their olive trees in the sunny town of Mypolonga, South Australia, the grove was grown from a place of passion and love.

In 2016, Augusto and Helen were ready to pass on the passion. No easy decision, but then came along another family ready to receive the torch. The sharing of food has always been important to the Bettio family. After purchasing an established grove in the picturesque town of Mount Torrens, Adelaide Hills, the time was right to expand their venture. This was realised after meeting with Augusto and Helen and understanding the passion and quality that had been poured into the groves at Mypolonga. The olives are lovingly grown, harvested, cold-pressed and packaged on site.

Lui and Tracie together with their children have embraced all things olives—from trips to Italy, Spain and the USA, to undertaking new qualifications. 

Embracing the industry, Rio Vista is all about promoting the community food feeling, highlighting how quality, simple ingredients make a difference. With kids, chickens, cows and sheep constantly running through the orchards, the groves are kept biodynamic where possible.

The Moretti family has been growing corn and making choice polenta in the Bergamo plains of Lombardia since 1922. To make their “Farina di Grano Turco” (what Italians call polenta), Moretti begins with otto file corn, a special heirloom variety grown in the Po River valley. The ears of corn are carefully husked then dried in temperature-controlled ovens to ensure an even texture in the finished polenta. The kernels are stone ground with the hull and germ, imparting a deeper flavor and more nutrition to the polenta.

Corn was introduced to Italy from the New World in the 16th century and quickly became popular when it was ground into a fine flour and used to create one of the favorite dishes of Northern Italy: Polenta. Today, in many parts of Italy, and mostly in the north, polenta is still preferred to pasta. Polenta is incredibly versatile and easy to prepare. The best polenta comes from the Lombardy region, particularly around the area of Bergamo north of Milan, where strains of corn are selectively bred and grown.

Vito Minoia, head cheese-maker at Vannella, was born in Conversano, Puglia. The Southern Italian town is also the birthplace of the famous burrata: a fresh, stretched curd cheese that is filled with creamy stracciatella and then hand-tied. At 16 years old Vito learnt how to hand stretch curds in the traditional way. Over the following years he worked in some of Italy’s best cheese factories and later opened his own business in Conversano, Caseificio Vannella, using his wife last name.

The Minoia family then decided to move out of Italy bringing his knowhow to Australia. Firstly they set up the new business in Cairns to be close to the dairy herds and buffalo and later moving to Sydney.
